Steamboat Dipping Sauce

Hey everyone,


I just love steamboat! What about you? For me, it is the simplest food ever and most important, it is delicious!
So what'sup with steamboat? This entry gives you a compilation of steamboat dipping sauce recipes. Bebold enough to try these recipes (of course the one that matches your taste bud!)...


Recipe 1


Group A

  1. 4 tomatoes
  2. 2 cloves of garlic
  3. A handful of chilli padi (depending on how hot you want your sauce)
  4. 2 cm of ginger
  5. 2.5 cm of galangal or lengkuas
  6. 2 lemongrass or serai
  7. An onion
  8. Coriander leaves
  9. 2-3 cups of water
  10. 3 tbs of olive oil
  11. Salt and sugar
Group B
  1. 4 lime (get the juices)
  2. 3 tbs of Nempla or the Thai Fish Sauce
  3. 3 tbs of Sesame oil and seeds (which my Mom lied to me so didn't put any but if you put this, your dipping sauce will definitely taste more authentic!)
  4. 3 tbs of Cooking vinegar
  5. 2 tsp of Cayenne Pepper
  6. 2 tsp of Paprika
  7. Salt and sugar to taste
  8. This is optional but if you want to make your sauce thicker, you could either put a tsp of corn flour or 2-3 tbs of thatThai Chilli Sauce
Method:
  1. Heat up a pot and pour in olive oil. Then, saute all of the ingredients from Group A for 5-6 minutes. Add the water and let them simmer. Add salt and sugar to taste. Don't overcook the tomatoes. Take it off from the heat and let them cold for a while.
  2. Next is to blend all cooked ingredients earlier on in your food processor. You probably don't want to add anymore water as the cooked ingredients, especially the tomatoes are now juicy and wet! You don't want to dip your food in soup now do you?
  3. When you have food-processed everything, pour back into the pot on a slow heat. Now, challenge your taste bud. Try and put the ingredients in B and get the taste right!
  4. Of course, some of you might like it extra hot, so add more of the Cayenne and Paprika. But if you prefer it to be sour, add more of the cooking vinegar or the lime juice. So as to those who love salty and fishy dipping sauce!
  5. To serve this dipping sauce, pour it nicely into the sauce plate and pour a bit of the sesame oil and seeds and some chopped coriander leaves!
You can add the sauce into your soup so it will taste more spicy or you could just dip your fish cakes/balls in it! Whichever way you're having it, you'll love it!




Recipe 2





Soy’s steamboat Sesame Sauce

  • 2 tbsp sesame paste
  • 1 tbsp sesame oil
  • 2 tbsp soya sauce
  • 6 tbsp stock
  • 2 tbsp toasted sesame seeds
  • 2 tsp chilli flakes in oil
  • handful of spring onions
Warm the sesame paste in the microwave for 20 seconds, you’ll find that it’ll be much easier to mix in all the other ingredients. Stock is added in to let the sauce have more of a fluid consistency.

Soy’s special steamboat sauce

  • 3 tbsp sate sauce 
  • 1 tbsp sesame oil
  • 1 tbsp soya sauce
  • 1 tbsp vinegar
  • 3 tbsp stock
  • 1 egg yolk
  • big handful of chopped spring onions and coriander stalks
Mix all the ingredients together and enjoy!


Recipe 3

Suki Dipping Sauce Recipe

Ingredients

5 cloves garlic, chopped
A handful of red hot chillies, chopped (about 1/2 cup)
2 tbsp Thai sweet chilli sauce
2 tbsp fish sauce
1/2 tsp salt
2 tbsp water
1-2 tbsp ground bean sauce
1/2 tbsp lime juice
1 tsp sugar
1 tbsp palm sugar, grated
3-5 drops of sesame oil
1 tbsp toasted sesame seeds
1 tbsp chopped coriander

Method

Blend all items together (except for sesame oil, sesame seeds and coriander) until smooth, then add sesame oil. Check for seasoning and adjust according to taste. Garnish with sesame seeds and coriander before serving.

Notes:
  1. Ground bean sauce is made from fermented soy beans. Make sure you use the salty one, and NOT the sweet bean sauce.
  2. Make a large batch, and any leftover sauce (and steamboat ingredients if any) can be used to make a quick stir-fry the next day!



Recipe 4

Simple Dipping Sauce

Garlic
 Cili padi
Soy sauce
Lime 
 Sesame oil (ask for this if they don’t give it to you)
Mix as much garlic and cili padi as your tongue can handle and pour enough soy sauce to cover it. Squeeze in a wedge of lime and add just a dash of sesame oil.

Cucumber vs. Zucchini


Side by side, they might fool you: cucumbers and zucchinis share the same dark green skin, pale seedy flesh, and long cylindrical shape. To the touch, however, these near-twins are not the same: cucumbers are cold and waxy, while zucchinis are rough and dry.
The two vegetables also perform very differently when cooked. Cucumbers wilt but maintain a slight crunch when heated. Zucchinis soften, sweeten and brown on the stove top or in the oven. Eaten raw, cucumbers are juicy, cool and crisp. Raw zucchini is heartier, a little sweet and a little bitter. As a general rule, we prefer cucumbers raw and zucchini cooked. (There are many exceptions to this rule.)
While you can’t replace one with the other, zucchinis and cucumbers do complement one another. Slice two cucumbers, two zucchinis and one sweet onion, and soak them all in rice vinegar for at least an hour in the refrigerator. Serve as a cooling side dish alongside something spicy or layer a few slices on top of a burger or sandwich.

Zucchini vs. Courgette


Courgette is the British, and particularly the New Zealand name for zucchinis. People in the UK may refer to courgettes as vegetable marrows. Zucchinis come in many shapes, and a few different colors. People are likely most familiar with courgettes that are long green oblongs, resembling a cucumber. Actually you can find round shapes, and yellow zucchini in many stores. Zucchini is perhaps the best known and most popular of the summer squashes.
Though vegetable marrows technically belong in the fruit family, they are almost invariably considered vegetables. They may be steamed, fried, grated into pasta sauce, or blanched and served as part of a vegetable plate. They’re also sliced into stews and soups, and have a mild taste. On a few occasions, courgettes are treated as a dessert and used in the delicious, sweet and spicy zucchini bread.
Zucchini grows on vines, and the beautiful blossoms they grow from are edible and favored by many. Squash blossoms from summer squash may be steamed, or served stuffed and fried with courgettes. Many people prefer to buy courgettes when they are still quite small and are attached to the blossom. Younger zucchinis do tend to be sweeter, and when they are still attached to their flowers they are often freshest.

I had the chance to meet one of these creatures when I was in the UK. It was so amazing and I never knew that an owl can be so huge! Like the one that you see in Harry Potter series! I must say that this bird is beautiful! I wish I could see more of them.
