Stuffed Grape Leaves (Dolmas)
(Serves 8 people)
Ingredients:
2 tbsp. olive oil
2 onions, minced
2 cloves garlic, finely minced
1 cup fresh mushrooms, finely chopped
1 1/2 cups uncooked long-grain white rice
3 tbsp. tomato paste
2 tbsp. dried currants or raisins
2 tbsp. pine nuts
1/2 tsp. ground cinnamon
3 tbsp. fresh chopped mint leaves
1 tbsp. dried dill weed
1 tsp. ground mace
1 tbsp. ground sumac
2 tbsp. pomegranate molasses
1 8-oz jar grape leaves
Optional additions:
Ground beef or ground lamb - cook lightly as they will be cooked more during the steaming process.
Chopped and sauteed zucchini
Chopped and sauteed eggplant
Chopped tomatoes
Chopped preserved lemons
How to:
In a saucepan, heat the oil over medium heat and add onions & garlic. Sweat the onions & garlic until tender, then add the mushrooms and saute until browned. Add the rice and enough hot water to cover. Cover the saucepan and simmer over low heat until the rice is half cooked, about 15 minutes.
While the rice is cooking, carefully remove the grape leaves from the jar without ripping them. Drain the liquid and rinse the leaves in warm water and set in a colander to drain. Trim off any stems.
When the rice is ready, stir in all the other ingredients and mix well. Allow the mixture to cool enough so that it can be handled with bare hands. Take one grape leaf and place it smooth side down, veiny sides up. Place about 1 teaspoon or 1 tablespoon (depending on how big the leaf is) of rice mix at the bottom of the leaf. Fold the sides and then roll the leaf from bottom to top. Repeat with the remaining ingredients.
Place a steaming rack in a large pot and arrange the dolmas on the steamer. It is OK to stack them. Place enough water at the bottom of the pot to almost reach the bottom layer of dolmas. Cover and simmer over low heat for 35 to 45 minutes, or until rice is totally cooked.
Remove and place on a serving plate. Drizzle with olive oil, and if desired, sprinkle with a little sumac or fresh lemon juice.
Enjoy your DOLMAS!

Creme Brulee
- 2 cartons double cream , 1 large (284ml) plus 1 small (142ml)
- 100ml full-fat milk
- 1 vanilla pod
- 5 large egg yolks
- 50g golden caster sugar , plus extra for the topping
How To:
- Preheat the oven to fan 160C/conventional 180C/gas 4. Sit four 175ml ramekins in a deep roasting tin at least 7.5cm deep (or a large deep cake tin), one that will enable a baking tray to sit well above the ramekins when laid across the top of the tin. Pour the two cartons of cream into a medium pan with the milk. Lay the vanilla pod on a board and slice lengthways through the middle with a sharp knife to split it in two. Use the tip of the knife to scrape out all the tiny seeds into the cream mixture. Drop the vanilla pod in as well, and set aside.
- Put the egg yolks and sugar in a mixing bowl and whisk for 1 minute with an electric hand whisk until paler in colour and a bit fluffy. Put the pan with the cream on a medium heat and bring almost to the boil. As soon as you see bubbles appear round the edge, take the pan off the heat.
- Pour the hot cream into the beaten egg yolks, stirring with a wire whisk as you do so, and scraping out the seeds from the pan. Set a fine sieve over a large wide jug or bowl and pour the hot ixture through to strain it, encouraging any stray vanilla seeds through at the end. Using a big spoon, scoop off all the pale foam that is sitting on the top of the liquid (this will be several spoonfuls) and discard. Give the mixture a stir.
- Pour in enough hot water (from the tap is fine) into the roasting tin to come about 1.5cm up the sides of the ramekins. Pour the hot cream into the ramekins so you fill them up right to the top - it's easier to spoon in the last little bit. Put them in the oven and lay a baking sheet over the top of the tin so it sits well above the ramekins and completely covers them, but not the whole tin, leaving a small gap at one side to allow air to circulate. Bake for 30-35 minutes until the mixture is softly set. To check, gently sway the roasting tin and if the crème brûlées are ready, they will wobble a bit like a jelly in the middle. Don't let them get too firm.
- Lift the ramekins out of the roasting tin with oven gloves and set them on a wire rack to cool for a couple of minutes only, then put in the fridge to cool completely. This can be done overnight without affecting the texture.
- When ready to serve, wipe round the top edge of the dishes, sprinkle 1½ tsp of caster sugar over each ramekin and spread it out with the back of a spoon to completely cover (Anne Willan's tip for an even layer). Spray with a little water using a fine spray (the sort you buy in a craft shop) to just dampen the sugar - then use a blow torch to caramelise it. Hold the flame just above the sugar and keep moving it round and round until caramelised. Serve when the brûlée is firm, or within an hour or two.

4 skinless, boneless chicken breasts, each 4 ounces and cut into 3 strips
1/4 cup fat-free milk
1/4 cup all-purpose (plain) flour
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
2 tablespoons canola oil
For the dipping sauce
1/2 cup honey
1/4 cup Dijon mustard
Directions
In a large bowl, add the chicken strips. Pour milk over the chicken and mix to coat well. Place in a single layer on wax paper.
In a small bowl, mix together the flour, salt and pepper. Sprinkle over the chicken strips, turning the chicken to coat evenly. Shake to remove excess.
In a large, nonstick frying pan, heat the canola oil over medium-high heat. Place the chicken strips in an even layer in the pan. Saute, turning once on each side until golden brown, about 2 minutes. Remove and place on paper towels to drain.
To make the dipping sauce, combine the honey and Dijon mustard in a small bowl. Stir to mix evenly.
Grilled Chicken Salad with Olives and Oranges
Ingredients
- 1/2 cup red wine vinegar
- 4 garlic cloves, minced
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon finely chopped red onion
- 1 tablespoon finely chopped celery
- Cracked black pepper, to taste
- 4 boneless, skinless chicken breasts, each 4 ounces
- 2 garlic cloves
- 8 cups leaf lettuce, washed and dried
- 16 large ripe (black) olives
- 2 navel oranges, peeled and sliced
For the dressing
Directions
To make the dressing, in a small bowl combine the vinegar, garlic, olive oil, onion, celery and pepper. Stir to mix evenly. Cover and refrigerate until needed.
Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.
Rub the chicken breasts with garlic, then discard the cloves. Grill or broil the chicken until browned and just cooked through, about 5 minutes each side. Transfer the chicken to a cutting board and let rest 5 minutes before slicing into strips.
Arrange 2 cups lettuce, 4 olives and 1/4 of the sliced oranges onto 4 plates. Top with 1/4 of the chicken strips and drizzle with dressing. Serve immediately.
Roasted Salmon
Ingredients
- 2 5-ounce pieces salmon with skin
2 teaspoons extra-virgin olive oil
1 tablespoon chopped chives
1 tablespoon fresh tarragon leaves (optional)
Directions
Preheat over to 425 F. Line a baking sheet with foil. Rub salmon all over with 2 teaspoons oil. Roast skin side down on foil-lined baking sheet until fish is cooked through, about 12 minutes. (Check if fish flakes easily with fork after it bakes 10 minutes. Continue baking only if it doesn't.) Using a metal spatula, lift salmon off skin and place salmon on serving plate. Discard skin. Sprinkle salmon with herbs and serve.

- 1 teaspoon ground cinnamon
- 2 tablespoons dark honey
- 1 tablespoon fresh lime juice
- 1 firm yet ripe pineapple
- 1 tablespoon grated lime zest
For the marinade
Directions
Prepare a hot fire in a charcoal grill or heat a gas grill or broiler (grill).
To make the marinade, in a large bowl, combine the olive oil, cloves, cinnamon, honey and lime juice and whisk to blend. Set aside.
Cut off the crown of leaves and the base of the pineapple. Stand the pineapple upright and, using a large, sharp knife, pare off the skin, cutting downward just below the surface in long, vertical strips. Cut off any remaining small brown "eyes" on the fruit. Stand the peeled pineapple upright and cut it in half lengthwise. Place each pineapple half cut-side down and cut it lengthwise into four long wedges; slice away the core.
Place the pineapple in the bowl with the marinade and stir to coat the pineapple.
Place on the grill and cook about 3 to 4 minutes, basting once or twice with the remaining marinade. Turn the fruit and move it to a cooler part of the grill or reduce the heat. Baste again with the marinade. Grill until the pineapple is tender and golden, about 3 more minutes.

French Caramelized Apple
- 3 tablespoons butter
- 5 spicy-sweet, crisp apples (Jonagold, Crispin, Honeycrisp), peeled and cut into 1/2-inch cubes
- 1 tablespoon, plus 2 tablespoons granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon lemon zest
- 1/3 cup apple cider
- 1/2 teaspoon cornstarch, as needed
Preparation:
Melt the butter in a large skillet over medium heat. Add the apples to the pan and sprinkle with 1 tablespoon sugar. Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest. Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
Transfer the apples from the skillet to a serving bowl with a slotted spoon. Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits. Reduce the heat slightly and allow the cider and the pan juices to simmer for 1-3 minutes, until the sauce has reduced and thickened slightly. If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment. Pour the finished sauce over the warm apples and serve immediately.

PEPPERCORN CRUST TUNA STEAKS WITH TOMATO SALSA
For the salsa
4 tomatoes, finely chopped
2 spring onions, finely chopped
¼ red pepper, finely chopped
for the chilli mayo
1tbsp sweet chilli sauce
For the fish
25g (1oz) tropical mixed peppercorns
1tbsp olive oil
4 x 150g (5oz) tuna steaks
Using a large knife roughly chop the tomatoes, onions and red pepper. Mix together in a bowl and add the sweet chilli sauce — enough to give the heat that you like.
Crush the peppercorns coarsely with a pestle and mortar — or use the end of a rolling pin in a small bowl. Sieve to remove the fine pepper — you can use this to season other meals.
Place the coarsely crushed pepper on a plate and roll the sides of the tuna in the peppercorns.
Heat the oil in a nonstick pan. When hot, add the tuna and cook for about 1-2 minutes on each side. Tuna should be served rare as it becomes very dry if over-cooked. Serve with salsa and salad leaves.
