Baginda Rasulullah saw menyeru bahwa semua keadaan yang wujud datang daripada qudrat Allah (swt). Apa yang berlaku dan sedang berlaku serta apa-apa yang akan berlaku semuanya datang dari Allah (swt). Inilah dakwah nabi-nabi termasuk Nabi (saw) bahwa kejayaan manusia bukan bergantung kepada apa yang diusahakan oleh manusia tetapi bergantung kepada apa yang ditetapkan oleh Allah (swt).

اللَّهُمَّ إِنِّى أَعُوذُ بِكَ مِنْ زَوَالِ نِعْمَتِكَ وَتَحَوُّلِ عَافِيَتِكَ وَفُجَاءَةِ نِقْمَتِكَ وَجَمِيعِ سَخَطِكَ

Renungkan....

Tatkala kita sedari betapa sukarnya untuk mengubah sikap diri kita sendiri, barulah kita ketahui berapa susahnya juga untuk kita mengubah sikap orang lain.

Jangan berputus asa apabila menghadapi kesusahan kerana titisan hujan yang jernih juga berasal daripada awan yang gelap.

Motivasi


Kita tidak boleh merubah situasi yang boleh membuat kita kecewa, sedih dan murung. Tetapi, kita boleh merubah fikiran kita dan apa yang kita fikirkan tentang situasi-situasi tersebut walau seburuk manapun ia. Rahsianya, cari sinar mentari di sebalik mendungnya awan. Walaupun perkara tidak berpihak kepada kita, cari cara bagaimana kita boleh jumpa nilai-nilai positif di dalamnya. Fikir yang baik-baik sahaja, kerana ia memberi keuntungan jangka masa panjang. Rezeki kita murah dan segala yang baik-baik datang sendiri pada kita. Kita menjadi apa yang kita selalu fikirkan. Buat apa fikir yang buruk, sedangkan kita boleh tarik semua yang baik-baik? Fikir yang buruk, kita akan dapat yang buruk.

Flapjack bars


  • crunchy flapjack bars 001HERO
  • 60ml (4tbsp) vegetable oil
  • 90ml (6tbsp) honey
  • 25g (1oz) light Muscovado sugar
  • 150g (6oz) organic oats
  • 50g (2oz) sunflower seeds
  • 25g (1oz) sesame seeds
  • 25g (1oz) desiccated coconut
  • 50g 2oz) dried apricot pieces, chopped
  • 50g (2oz) sultanas

Put the oil and the honey into a saucepan and heat gently until the honey has melted. Remove from the heat and stir in all the remaining ingredients.
Press the mixture into a greased 28cm x 18cm (11" x 7") baking tin and level the top.
Cook in the oven for 20-25 minutes at Gas Mark 4, 180°C, 350°F, until the biscuit is golden brown. Mark it into bars while it is still hot. Cool slightly, then cut into slices. Remove from the tin and cool on a wire rack.
Store the bars in an airtight container; they will keep for one week.

Apple Flapjack



  • Apple flapjacks HERO

  • 250g (8oz) butter
  • 250g (8oz) caster sugar
  • 175g (6oz) golden syrup
  • 425g (14oz) porridge oats
  • 2 apples, peeled and chopped

Preheat oven to Gas 4, 180ºC, fan160°C. Oil and line base of a 20x30cm (8x12in) cake tin with baking parchment.
Melt butter, caster sugar and golden syrup together in a pan, stirring until sugar has dissolved. Remove from heat and stir in oats and apples.
Spread mixture in tin and bake for 20-25 minutes. Cut into 12-14 bars; allow to cool before turning out of the tin.

Apple crumble



  • Apple crumble HERO
  • 4 eating apples
  • 2½tbsp caster sugar
  • 2tbsp water
  • 100g (3½oz) plain flour
  • 50g (2oz) porridge oats
  • 50g (2oz) butter

Preheat the oven to Gas 5, 190ºC, fan170°C. Peel, core and thinly slice the apples, and place in a 1-litre pudding basin. Sprinkle with a little of the sugar. Pour over 2tbsp boiling water.
Place the flour, sugar and oats in a mixing bowl. Add the butter and rub into the mixture until it resembles breadcrumbs. Sprinkle topping over the apples and bake for 40-45 minutes until golden brown. Serve with a spoonful of homemade custard.

Mexican Japaleno and Lime Burger

  • 1 onion, finely chopped
  • 1 pepper, diced
  • 1tbsp of Finest Mexican style rub with Jalapeno & Lime
  • 100g cheese, grated


Mix the mince, onion, pepper, garlic, rub, cheese and thyme in a bowl. Mould into patties, and then fry, grill oven bake or barbecue.
Serve in rolls with salad, sour cream and guacamole.

  • For the spicy chicken
  • 2 limes, rinsed
  • 1tbsp olive oil
  • 2 x 240g packs Skinless mini chicken breast fillets
  • For the peppers
  • 4 peppers (red, green, yellow and orange), washed
  • 1 medium onion
  • 2 garlic cloves, peeled and crushed
  • For the guacamole
  • 2 ripe avocados
  • ¼tsp ground cayenne pepper
  • 8 cherry tomatoes, washed and quatered
  • To serve
  • 320g pack flour tortillas, warmed as per packet instructions


Make the marinade for the chicken by grating the lime zest into a shallow bowl. Cut thelimes in half. Squeeze the juice from 3 halves into the bowl. Add the cayenne pepper and olive oil. Mix well. Add the chicken. Leave for 10 minutes.
Cut each pepper in half and pull out the core and stalk to deseed. Cut into thin slices and place in a mixing bowl. Peel and thinly slice the onion. Add to the peppers, with garlic and oil and mix. Leave until ready to cook.
To make the guacamole first cut the avocados in half. Remove the stones and scoop out the flesh. Gently mash with a fork to make a lumpy puree. Stir in the garlic with the juice from the remaining half lime and the cayenne pepper. Stir the cherry tomatoes into the guacamole
Heat the oil in a large non-stick pan over a medium heat. Cook the chicken, stirring occasionally until the pieces are browned and cooked through (usually about 7 minutes). There should be no trace of pink flesh and the juices must run clear. Transfer to a serving bowl.
Stir-fry the pepper mix for 2 minutes until it is lightly coloured but still crunchy. Wrap the chicken, guacamole and peppers in the warm tortillas.

  • 2 teaspoons chilli powder
  • 1 teaspoon smoked paprika powder
  • 2 skinless chicken breasts cut into strips (150g each)
  • 1 tablespoon Flora Cuisine
  • 1 onion thinly sliced
  • 1 avocado
  • 1 lime
  • 4 flour tortillas
  • 1 red pepper sliced
  • 150g (6 oz) low-fat natural yoghurt
  • handful of fresh chopped coriander


Combine the chilli and paprika and sprinkle evenly over the chicken.
Heat the Flora in a non-stick frying pan, and fry the chicken with the onion until it is cooked through.
Halve the avocado, remove the stone and skin and cut into small dice. Sprinkle over the lime juice.
To serve, divide the chicken and onion evenly between the tortillas, add the pepper, avocado, yoghurt and chopped coriander, roll up and enjoy!

Spaghetti bolognese

  • 30ml olive oil
  • 400g beef mince
  • 200ml beef stock
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 400g chopped tomatoes
  • 1 bay leaf
  • salt
  • pepper
  • For the spaghetti and garnish
  • 300g dried spaghetti
  • 50g parmesan, shaved


Heat the olive oil in a large saucepan over a medium heat for 1 minute. Add the onions with a little salt and sweat them for 5 minutes, stirring occasionally. Stir in the mincedgarlic and stir well, cooking for a further 2-3 minutes.
Increase the heat and add the mince, browning well and stirring to break the meat up. Once browned, stir in the chopped tomatoes, then the stock and bring to the boil. The sauce will look quite thin at this point but it will thicken as it reduces.
Reduce the heat to a simmer and add the bay leaf. Cook for 45-50 minutes uncovered until the sauce has thickened, making sure to stir occasionally.
Once the sauce is ready, adjust the seasoning and keep warm. Cook the spaghetti in a large saucepan of boiling salted water according to packet instructions until 'al dente'; usually 8-10 minutes. Drain and toss well with the sauce.
Spoon onto serving plates and garnish with the shaved parmesan. Serve immediately.

Renung-renungkan...

Nasihat Ulama'

Janganlah kamu menjadi ‘pak turut’ yang sering berkata (& berfikir) : “Jika orang di sekelilingku baik nescaya akan baiklah aku, namun jika mereka zalim, aku jua menjadi zalim”. Hendaklah kamu menetapkan jiwa dan pendirianmu sehingga jika manusia baik, kamu baik bersama mereka, tetapi jika mereka buruk, maka kamu menjauhi keburukan & kezaliman (tidak seperti mereka)."

Islam tidak mengajar kesamarataan dlm semua perkara, kerana 'equality' dalam semua perkara adalah suatu kezaliman. Justeru, ilmu & pendirian yang disampaikan oleh seseorang tokoh akademik atau ilmuan itu pasti akan sentiasa cenderung & berpihak kpd yg diyakini lebih benar @ kurang mudarat. Jika anda ingin mereka sentiasa 'neutral' & tidak berpihak, maka anda akan jatuh dalam zalim krn ingin kezaliman dilakukan oleh mereka. Ilmu itu mnjadikan sesrog alim perlu berpendirian & tak neutral. Adil itu brbeza dgn equlity dan fairness, adil itu adlh justice, walau ia berpihak. Sentiasa neutral pula boleh jatuh ke dlm munafiq (Ust. Zaharuddin)

Antara kejahilan yang merbahaya di zaman ini adalah pelajar ilmu Islam dari satu dua hadis & terus mengambil faham secara literal tanpa memahami konteks & erti hasil dari gabungan nas yg pelbagai, akhirnya menjadi sesat dlm kefahaman, lebih hodoh apabila dgn gopoh mengutuk ulama sbgi salah hanya krn kefahamnnya terhdp satu dua hadis yg baru dipelajari. Amata benar kata2 hukama "hadis Nabi boleh menjadi racun bila diperolehi secara mentah oleh awam, ia hanya menjadi penawar bila diproeses oleh ulama ( Ustaz Zaharuddin)

Allah memimpin sesiapa yang dikehendakiNya (menurut undang-undang dan peraturanNya) kepada nur hidayahNya itu; dan Allah mengemukakan berbagai-bagai misal perbandingan untuk umat manusia; dan Allah Maha Mengetahui akan tiap-tiap sesuatu.

...Al-Quran itu sebagai ayat-ayat keterangan yang jelas nyata; dan sesungguhnya Allah memberi hidayah petunjuk kepada sesiapa yang dikehendakiNya (menurut peraturan dan undang-undangNya).

Apabila dibacakan kepada mereka ayat-ayat (Allah) Ar-Rahman, mereka segera sujud serta menangis.

Sesiapa yang beroleh hidayah petunjuk (menurut panduan Al-Quran), maka sesungguhnya faedah petunjuk yang didapatinya itu hanya terpulang kepada dirinya sendiri, dan sesiapa yang sesat maka sesungguhnya kesan buruk kesesatannya hanya ditanggung oleh dirinya juga. Dan seseorang yang boleh memikul, tidak akan memikul dosa perbuatan orang lain (bahkan dosa usahanya sahaja).

Dan Kami tidak mengutuskan seseorang Rasul melainkan dengan bahasa kaumnya supaya ia menjelaskan (hukum-hukum Allah) kepada mereka. Maka Allah menyesatkan sesiapa yang dikehendakiNya (menurut undang-undang peraturanNya), juga memberi hidayah petunjuk kepada sesiapa yang dikehendakiNya (menurut undang-undang peraturanNya); dan Dia lah jua Yang Maha Kuasa, lagi Maha Bijaksana.

(Itulah dia kesudahan kehidupan dunia), dan sebaliknya Allah menyeru manusia ke tempat kediaman yang selamat sentosa, dan Dia sentiasa memberi petunjuk hidayahNya kepada sesiapa yang dikehendakiNya (menurut undang-undang peraturanNya) ke jalan yang betul lurus (yang selamat itu).

Sebahagian (dari umat manusia) diberi hidayah petunjuk oleh Allah (dengan diberi taufiq untuk beriman dan beramal soleh); dan sebahagian lagi (yang ingkar) berhaklah mereka ditimpa kesesatan (dengan pilihan mereka sendiri), kerana sesungguhnya mereka telah menjadikan Syaitan-syaitan itu pemimpin-pemimpin (yang ditaati) selain Allah. Serta mereka pula menyangka, bahawa mereka berada dalam petunjuk hidayah.

Cinta atau tanggungjawab?

Cinta itu bukan alasan utama untuk dapat bahagia kerana ramai juga bercerai kerana cinta. Ramai orang bercinta bagai 'hilang ingatan' tapi bercerai berai juga akhirnya. Ramai yang kahwin suka sama suka, tapi rumahtangga runtuh akhirnya. Ini bukan soal cinta atau suka. Ini soal sejauh mana kebergantungan suami isteri pada Allah dlm setiap urusan. Sejauh mana mereka sepakat dalam mencari BERKAT dalam rumahtangga...Bila tiada berkat naik kereta BMW bersama isteri pun tak seronok asyik bergaduh je tapi bila berkat, naik Kancil dari KL ke Penang pun rasa seronok bergelak ketawa dgn isteri atau suami kita... Terimalah Dia Seadanya...

Oat Porridge



  • Porridge with compoteHERO

  • 300g dried apricots, cut into strips
  • juice and zest of 2 oranges
  • 100g (3½oz) dried cranberries
  • 75g (3oz) walnut pieces
  • 30g (1¼) porridge oats (per serving)


Add the apricots to a pan with the orange juice and gradually add in up to 300ml of water, stirring as you go. Bring to the boil. Reduce the heat and simmer for 5 minutes.
Mix in the cranberries, orange zest and walnuts. Decant the compote into a jar, allow to cool, then store in the fridge for up to two days.
Make the porridge according to the packet instructions then serve with a spoonful of compote.

Chocolate and raspberry tarlets

  • 50g (2oz) unsalted butter, softened
  • 40g (1½oz) icing sugar
  • 1 medium egg yolk
  • 40g (1½oz) cocoa powder
  • 75g (3oz) plain flour
  • For the filling
  • 100g (3½oz) luxury plain chocolate
  • 40g (1½oz) caster sugar
  • 16 whole Organic raspberries


To make the chocolate pastry, place the butter, icing sugar, and egg yolk in a bowl and stir with a wooden spoon until smooth. Sift in the cocoa powder and flour and mix to a dough. Roll into a ball, flatten and chill in the fridge for 20 minutes.
Preheat the oven to gas 4, 180°C, fan 160°C and grease 4 individual 11cm (4 in) flan tins. Remove the pastry from the fridge and divide into four pieces. Place each piece in an individual tart tin and press into place with your fingers. Then chill in freezer for 10 minutes.
Set the tins on a baking tray then place a square of parchment into each pastry case, fill with baking beans or rice and bake for 10 minutes.
Remove the baking beans and parchment and return to the oven for a further 5 minutes until set. Set aside, and increase the oven temperature to gas 6, 200°C, fan 180°C.
Next, make the filling. Melt the chocolate in a bowl over a pan of boiling water then cool slightly.
In a separate bowl, whisk the egg whites until peaks start to form, then add the sugar gradually, whisking the whole time.
Mix the egg yolks into the cooled melted chocolate. Stir a spoonful of the egg whites in to loosen the mixture, then carefully fold in the remainder of the egg whites. Spoon half the mousse mixture into the tartlet cases, then divide the raspberries evenly between the 4 tartlets. Top with the remaining mousse mixture.
Cook for 12 minutes until just firm, but still slightly wobbly in the centre. Serve immediately with whipped cream and more raspberries. Eat warm or cool.







Double Chocolate Mousse



  • Double Chocolate MousseHERO
  • 100g (3½oz) dark chocolate
  • 100g (3½oz) white chocolate
  • 3 egg yolks
  • 400ml (14fl oz) double cream
Break each chocolate into a separate heatproof mixing bowl and melt in the microwave, or place one at a time over a pan of gently simmering water, then remove the bowl from the pan and set aside to cool slightly.
Put the eggs and sugar in a medium heatproof mixing bowl. Set the bowl over a pan containing 2.5cm (1in) of gently simmering water and whisk with an electric hand whisk on low speed for 4-5 minutes. The mixture will become thickened and paler in colour. Remove the bowl from the pan and heat, then continue whisking for a minute or 2 to cool the mixture. Set aside.
Whisk the cream to very soft peaks. Fold one third of the cream into the cooled dark chocolate, followed by two thirds of the egg yolk mixture,Fold the rest of the cream into the white chocolate, then the rest of the egg yolk mixture.
Layer the two mousses into four glasses and decorate with grated chocolate or cocoa. Chill for 1 hour before serving.

strawberry n vanilla cheese cake

Strawberry cheesecake HERO



  • 100g (3½oz) reduced fat digestive biscuits
  • 50g (2oz) reduced fat butter
  • 5 sheets leaf gelatine
  • 450g (14½oz) strawberries, hulled
  • 300g (10oz) light cream cheese
  • 300g (10oz) fat-free Greek yogurt
  • 3tbsp caster sugar
  • few drops vanilla essence
  • 1tsp icing sugar

For the biscuit base, crush the biscuits in a plastic bag to make fine crumbs.
Melt butter in a small pan and stir in the biscuits. Divide between 6 individual silicone cake moulds or cupcake cases and pack down with the end of a rolling pin. Place in the fridge for 15 minutes to set (put moulds on a tray so they are easy to move around).
Place gelatine in a small pan with 4tbsp of water. Soak for 10 minutes until softened, then heat very
gently until melted. Do not boil. Remove from heat.
Put 150g (5oz) strawberries in a food processor or liquidiser with the cream cheese, yogurt, sugar and vanilla. With the machine running, pour on the gelatine in a thin stream until smooth.
Pour over biscuit mix and set for 3 hours in the fridge.
Make the strawberry sauce by blending another 150g (5oz) of strawberries in a clean food processor or liquidiser with the icing sugar. Blend until smooth. If liked the sauce can be boiled to reduce it and make it jammier in texture.
To turn out, run a knife around the inside of each mould and invert onto a tray, peeling off moulds. Top with halved strawberries and coulis.

  • 125g (4oz) plain flour
  • 1½tsp baking powder
  • ½tsp bicarbonate of soda
  • 100g (3½oz) soft light brown sugar
  • 1 large egg
  • 150g (5oz) pot raspberry yogurt
  • 2tbsp sunflower oil
  • ½tsp vanilla extract
  • 125g (4oz) fresh or frozen raspberries
  • icing sugar, for dusting

Heat the oven to gas 4,180˚C, fan 160˚C. Line a 12-hole bun tray with 12 paper fairy cake cases. Sieve the flour, baking powder, bicarbonate of soda into a large mixing bowl, then add the sugar. Lightly beat the egg in a separate bowl and mix in the yogurt, sunflower oil and vanilla extract. Pour into the dry ingredients and mix together until everything is just combined. Add the raspberries to the mixture and carefully fold in, making sure you don’t over-mix otherwise they will all break up. 


Divide the mixture between the cake cases  and place in the oven to cook for 15 minutes, until golden and springy




To check the cakes are cooked, you can insert a metal skewer into the middle of a cake. If it comes out clean they are ready. Remove from the oven and leave to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Dust with icing sugar just before serving.







muesli & fruit porridge

creamy apple lemon muesli



  • 225g porridge oats
  • 300ml cold water
  • 100ml apple juice
  • 225ml natural yogurt
  • 3tbsp clear honey
  • zest of 1 lemon
  • 2 dessert apples, peeled and grated
  • generous handful of frozen raspberries - defrosted overnight
  • handful of toasted almonds

Mix the oats, water and fruit juice together in a bowl. Cover and leave in the fridge overnight.
In the morning, stir in the yoghurt, honey, lemon zest and grated apples - top with the raspberries and almonds or your favourite fruit.

Smoothie for Breakfast

  • 1 ripe juicy pear, cored
  • 1 ripe banana, peeled
  • 30g porridge oats
  • 1tbsp clear honey
  • 110g low fat natural yogurt
  • 250ml apple juice
  • handful of ice cubes

Place all the ingredients in a smoothie maker or food processor and blend till smooth. Serve chilled in a tall glass.

Fruity Breakfast Crunch

  • 5tbsp maple syrup
  • 2tbsp runny honey
  • 2tbsp vegetable oil
  • 200g (7oz) rolled oats
  • 75g (3oz) sunflower seeds
  • 75g (3oz) desiccated coconut
  • 50g (2oz) ready-to-eat dried apricots, chopped
  • 50g (2oz) raisins
  • 50g (2oz) dried mango or pineapple, chopped
  • 50g (2oz) dried banana chips, chopped
  • 2tbsp natural or fruit-flavoured yogurt
  • handful of fresh fruit (chopped mango, apple, strawberries, raspberries, kiwi or banana)

steps:

Heat the oven to gas 2, 150˚C, fan 130˚C. Line a large baking tray with baking parchment. Mix together the maple syrup, honey and vegetable oil in a large bowl. Add the oats, sunflower seeds and coconut and mix well. 


Tip onto the baking tray and spread evenly. Place in the oven for 15 minutes. Mix around on the tray and return to the oven for a further 10-15 minutes.


Remove from the oven and leave to cool. If any of the mix is stuck together in places, break into smaller pieces. Stir in the dried fruit (picture 3). (This mixture will keep crisp in an airtight container for up to 2 weeks.) To serve, try with ice-cold milk or your favourite yogurt, or you can layer it in a glass bowl or sundae dish with yogurt, grated apple, some apple juice or milk and fresh fruit.









Toffee apples: Crisp, juicy apples in a crunchy, super-sweet coating


    Steps
  1. Wash 6 British eating apples and dry with kitchen paper.
  2. Insert a lolly stick through each core. Grease the baking paper with butter and put on a baking tray. Put a bowl of cold water in the fridge.
  3. Put 450g demerara sugar in a pan with 50g unsalted butter, 2tsp cider vinegar and 1tbsp golden syrup. Add 150ml cold water and heat, stirring gently, until the sugar has completely dissolved.
  4. Bring to the boil, then boil for 10 minutes until it turns to toffee. To test if it's ready, drop a small piece into the bowl of cold water. If it goes hard immediately, it's ready.
  5. Remove from the heat and dip the apples in, swirling them around gently until coated. Put on the greased paper and leave to set.

Oaty ginger cake


    Ingredients
  • 175g butter, cut into cubes
  • 250g soft brown sugar
  • 225g black treacle
  • 225g plain flour
  • 2 level tsp ground ginger
  • 2 level tsp ground cinnamon
  • 1 level tbsp baking powder
  • 225g Asda Chosen by you Scottish Porridge Oats
  • 3 or 4 balls stem ginger in syrup, chopped
  • 2 large eggs
  • 400ml milk

    Steps
  1. Preheat the oven to 180C/160C Fan/Gas 4. Line a 23cm x 23cm (4cm deep) cake tin with baking paper.
  2. Put the butter, sugar and treacle in a pan and heat gently, stirring often, until the butter has melted. Remove from the heat and leave for 15 minutes to cool slightly.
  3. Sift the flour, ginger, cinnamon and baking powder into a bowl. Add the oats and stem ginger, then stir well to mix.
  4. Lightly beat the eggs and milk together in another bowl. Add to the flour, along with the treacle mixture. Stir until evenly mixed, then pour into the tin.
  5. Bake in the oven for 1 hour 15 minutes. Leave to cool in the tin for 15 minutes, before transferring to a wire rack.
