LAYERED CHOCOLATE AND ORANGE MOUSSE

 125g Asda White Chocolate, in squares
 4 large free-range eggs, separated
 2tbsp orange juice
 2tbsp Cointreau (or extra orange juice)
 2 level tbsp caster sugar
 125g Asda Dark Chocolate, 50% cocoa solids, in squares
 12 raspberries, to decorate

HOW TO MAKE:

Put the white chocolate in a bowl, standing over a pan of simmering water, making sure the base of the pan doesn’t touch the water. After 1 minute, turn off the heat and leave until the chocolate has melted. Set aside for 10 minutes.

Beat in 2 egg yolks and then 1tbsp each of the orange juice and Cointreau.

Whisk 2 egg whites until stiff. Add 1tbsp sugar and whisk until stiff again. Gently fold into the chocolate mixture using a metal spoon.

Divide between four glasses and chill for an hour.

Repeat with the dark chocolate and the remaining ingredients. Divide between the glasses and chill for another hour. Decorate with raspberries before serving.

Top tip: this mousse is best made with chocolate with 50% cocoa solids - Asda Dark Chocolate is perfect for it.
