PANCETTA AND PEAS SPAGHETTI

350g Asda Spaghetti
 120g pack Asda Diced Pancetta
 50g butter, softened
 1 bunch spring onions, trimmed and sliced, including green parts
 300g frozen peas
 3tbsp freshly chopped flat-leaf parsley
 50g Parmesan
 
HOW TO MAKE:

Cook the spaghetti according to the packet instructions. Meanwhile, dry-fry the pancetta in a nonstick frying pan until crisp at the edges. Add 15g butter and the spring onions, and cook for about 3 minutes. Boil the peas for 3 minutes; drain.

When the spaghetti is cooked, drain, then return to the pan. Add the rest of the butter and toss over a low heat until melted.

Remove from the heat. Add the peas, pancetta, onions and parsley, and grate over half the Parmesan. Toss. Serve sprinkled with shavings of the remaining Parmesan.
