3tbsp olive oil
2tbsp lime juice
2tsp honey
1 large red chilli, deseeded and chopped
225g peeled prawns
1tbsp chopped coriander
2 ripe mangoes, peeled and sliced
HOW TO MAKE:
Whisk together the olive oil, lime juice and honey, and season. Add the chilli, prawns and coriander. Chill for 20 minutes.
Arrange the mango slices on plates with the prawns and dressing.
